Stuffed peppers with goatcheese
Stuffed peppers with goatcheese and pine nuts
Healthy peppers stuffed with a delicious taste of the best flavours you can mix with! These stuffed peppers are nice being served as a lunch or diner or during the weekends with celebrations.

Ingredients for 4 persons
4 red or yellow peppers (or make a nice mix of peppers)
400 gram of minced beef
2 tomatoes
1 carrot
1 onion
3 garlic cloves
150 grams of soft goatcheese
Pine nuts, for every pepper 1 tablespoon
1 stock cube
Fresh basil 
Pepper and salt, depending on your taste

Preperation of the stuffed peppers with goatcheese and pine nuts
Pre-heat your oven at 180 degrees.
Remove the top of the peppers, the part which you don't want to eat, and remove the seeds. Do not throw the top of the peppers away!
Now cut the onion, garlic cloves, tomatoes, carrot in small pieces and put them into a wok.
Add some coconut oil and add the minced beef in the same wok with the vegetables.
Add the stock cube, fresh basil and some salt and pepper to the wok.
Crumble the goatcheese in smaller pieces and mix this with the minced beef and vegetables in the wok.
When the peppers are cooked-trough you can stuff peppers with the mix of minced beef and veggies.
When the peppers are stuffed decorate them with pine nuts and put the top of the pepper on it.

Now put the stuffed peppers in the oven for about 20-25 minutes. Be careful that they won't burn!
