Coconut Encrusted Chicken

Coconut is truly fantastic for your health. Coconut Oil hasbeen proven to support healthy thyroid function by not inhibiting the body'sthyroid metabolism like other Vegetable Oils do. It also helps preventosteoporosis and tooth decay and reduces hypoglycemic cravings.

Here's a fascinating fact: In the 1940's, farmers tried touse Coconut Oil to fatten up their animals, only to have their plan backfire.They ended up with lean, active and healthy cattle.

Ingredients

• 2 Boneless,Skinless Organic Chicken Breasts

• ½ cupNatural Coconut Flakes

• Sea Salt& Pepper

• 2 FreeRange, Organic Eggs

• 3 tbsp ofVirgin Coconut Oil

• 1 bag MixedSalad Greens or Spinach

• 2 tbspOlive Oil

• 2 tbspLemon Juice

Method

- Cut theChicken into strips somewhere between ½ inch and an inch thick

- In ashallow dish, combine Coconut Flakes and Salt and Pepper

- In a bowlcrack the Eggs and lightly beat

- Dip theChicken strips into the Egg and then roll in the Coconut mixture.

- Gently heatthe frying pan with Virgin Coconut Oil and cook the Chicken strips thoroughly

- Remove fromthe heat and place on a bed of Mixed Salad Greens

- Drizzlewith Olive Oil, Lemon Juice, Salt & Pepper and serve

Thanks for sharing! That sounds amazing. I'll have to try it. I eat loads of coconut ie coconut oil, flakes, and looooooove young coconuts :)
